Turkey Taco Cups
Don't know what to do with all those turkey leftovers from Thanksgiving? I added a little a little Mexican flare and turn my leftover turkey meat into Turkey Taco Cups by adding just a few pantry staples.
10-12 small flour tortillas
4 C. leftover diced turkey meat
2/3 C. Victoria taco sauce (mild or hot)
2/3 C. Ketchup
1 T. ground Cumin
1/2 C. whole kernel corn
1/2 C. grated cheese (Mexican blend or cheddar/jack), plus more for topping
Preheat oven to 325 degree F.
Using a muffin tin, place 1 flour tortilla in each cup; the sides will be folded.
Bake tortillas for 10-12 mins. and set aside.
Combine turkey meat, taco sauce, ketchup, cumin, corn and cheese in a bowl.
Fill tortilla cups with the turkey mixture and add more cheese on top.
Bake filled tortilla cups for 15-20 mins. and enjoy!
Feel free to substitute the turkey meat for any protein (chicken, shredded beef, hamburger, tofu). I kept the meat mixture pretty simple for the kids, but you can also jazz things up by adding black beans, diced green chili and black olives.
